THE CHEF BRANDO STORY

  • THE VISION

    Before The Windy Rose ever existed I wanted to showcase something where I came from. I saw how Mexicans, Thai & Jamaicans and other nationalities migrated here in the U.S. & showcased their commons foods they grew up on.

  • THE IDEA

    For me in particular, being from Southside Chicago, there was plenty to showcase. I wanted to showcase the Oregonians what street food I grew up on & it hit me! Chicago & Soul street food but with a twist.

  • THE CONCEPT

    I love the Mexican cuisine so I wanted to infused Soul Food with Mexican & along from Chicago I wanted to incorporate the authenticity of the Windy City taste to a higher level. This menu was inspired by my childhood memories, the beautiful city of Chicago & the inspiration of the Mexican cuisine.
